Cincy Chic: What is Crown Republic Gastropub?
Haley Nutter-Sitek and Anthony Sitek, Proprietors behind Crown Republic Gastropub: Crown Republic Gastropub is the place where rustic New American fare meets “made from scratch” cooking with heart. We are inherently intersectional, both literally — at the intersection of Sycamore and 8th Street — and metaphorically. We are where innovation meets tradition; where global meets local. When a customer walks into Crown Republic, we want them to feel welcome, like their at home — even if home is thousands of miles away.

Cincy Chic: What’s the inspiration behind it?
Nutter-Sitek and Sitek: Crown Republic finds inspiration from around the globe and at home.

Sitek: From my time in the kitchen with my grandma, Grace DeMatteo, and cultural traditions that add an eclectic flair to dishes.

Nutter-Sitek: Crown Republic takes pride in creating nearly all of our ingredients in house — including our pasta!

Cincy Chic: Who’s behind it?
Nutter-Sitek and Sitek: As Husband and wife, Crown Republic has been our passion project.

Sitek: Haley is a Native Cincinnatian who grew up on a farm in Loveland. She left Ohio and met Anthony in Culinary school. After working her way around Chicago and Rhode Island, Haley saw Cincinnati as not only the perfect place to settle down and raise a family, but also as a burgeoning food scene.

Nutter-Sitek: Before opening Crown Republic, Anthony first discovered his love for farm to table fair in Princeton, New Jersey at the Terra Momo Restaurant Group. Between then and now, Anthony has worked for prestigious chefs and restaurants including the four-star Apeiro Kitchen and Bar in South Florida and Bobby Flay’s Bar American in New York City.

Cincy Chic: What’s on the menu?
Nutter-Sitek and Sitek: The Crown Republic Menu is made up of seasonal, fresh, and made-from-scratch dishes including breakfast, small bites, Avocado and Crab Toast, scratch pastas, and stand out main dishes like their seared salmon with butter braised leeks and smoked walnuts or their crispy pork Milanese.

Nutter-Sitek and Sitek: What makes Crown Republic unique is our attention to hospitality and service. From day one we’ve sought to treat every customer that comes through that door like family. It’s a quality that more easily felt than explained, but could be summed up as ‘good energy.’ At Crown Republic family comes first, and if you aren’t family, you’ll feel like family. At Crown Republic, we know their regulars, we’ve got their spot ready and greet them by name.
