Mexican Flan

Yield: 8 to 10 servings



  • 1/2 Cup sugar
  • 1 Tablespoon vanilla
  • 6 Large eggs
  • One 14 ounce can sweetened condensed milk
  • 8 Ounces cream cheese, softened
  • 2 Cups cold water
  • Whipped cream for garnish (optional)



  • Preheat the oven to 350 degrees F.
  • Place the sugar in a 1-quart saucepan.
  • Stir the sugar over medium heat with a wooden spoon until it has melted into a nice caramel color.
  • Immediately pour it into a 9-inch glass pie plate.
  • Place eggs, cream cheese and vanilla together in a large bowl and blend in an electric mixer.
  • Beat until smooth.
  • In a 4-cup measure, mix the evaporated milk and water together.
  • Fold into egg mixture and pour over the cooled caramel.
  • Set the pie pan into a larger container that will hold at least 1-inch of boiling or very hot water.
  • Place the flan and the container into the oven, slowly adding the water no more than 1 inch all around the flan.
  • Bake 20 to 30 minutes.
  • Carefully remove the flan from the water bath and allow to cool.
  • Invert onto a serving platter and refrigerate until ready to serve at room temperature, garnished with sweetened whipped cream.
